"Sausage (Lat.
salsus "salted," hence preserved) is one of the oldest forms of processed food. Meat, or mixtures of various meats, blood, offal, and other ingridients stuffed into gut, or other suitable materials were known in remote antiquity. They are alluded to in Homer's Odyssey and in later Greek literature. The ancient Romans prepared one type from fresh pork and white pine nuts, chopped finely with cumin seed, bay leaves and black pepper. In the Middle Ages sausage-making became a local culinary art, and many types of sausage derive their names from the places where they were made; e.g., frankfurter (Frankfurt Am Main),........................."
